Venison is today&#039;s health conscious choice. It is a gourmet fare and is becoming more popular every year. Elk is lean, with only 22% of the meat energy derived from fat, as compared with 35% to 47% for lamb and 33% for beef. Venison is low in cholesterol, and the ratio of polyunsaturated and monounsaturated fatty acids is higher than in conventional red meats. Therefore Elk has the best attributes of red meat without the perceived health risks.</description>

		<description>I&#039;d put Bison right under eggs as far as quality goes, but more importantly because it&#039;s easier to track your calories.  Bison is so much leaner than other red meats that you can track your caloric intake with more precision.  I eat my Bison raw since cooking this [expensive] meat deteriotes it&#039;s properties (like any other food)...but be careful...you should only eat raw meat from a trusted source that is grass fed...!</description>
